Classic Victoria Sponge Cake

Whatever the occasion, this cake seems to be something you just can't go wrong with. This easy to remember and easily adaptable recipe, that my mum has been using since long before I was born, has become my go-to whenever I'm in the mood to quickly whip up a cake.

Classic Victoria Sponge Cake Recipe

For the Cake


8oz Vegan Butter
8oz Caster Sugar
8oz Self Raising Flour
1 Banana (mashed)
1 Tbsp Flax or Chia Seeds (with 3 tbsp water)
1 Tbsp Almond Milk
2 Tsp Baking Soda
1 Tsp Vanilla Extract 



 - Preheat oven to Fan 175 C/ 190 C/ Gas Mark 5

1. Mix Butter and Sugar together.

2. Add mashed Banana and Flax or Chia seeds.

3. Add Milk.

4. Add Baking Soda, Vanilla Extract and sift in the Flour.

5. Divide mixture between two lined cake tins.

6. Bake for 15-20 minutes or until skewer comes out clean.
Leave to cool before adding the filling.

For the Filling


Strawberry Jam
1 Tsp Vanilla extract
1 Tbsp Caster sugar


1. Spoon and spread as much jam as you like onto the top of one of the sponges.

2. Add Vanilla Extract and Caster sugar to the whipped cream.

3. Carefully spoon the Coconut Whipped Cream onto the Jam and place the second sponge on top.

Dust with Icing Sugar to serve.
