Simple Sultana Cinnamon & Apple Scones




Feels like I haven't baked in ages!
So today I looked around the kitchen for inspiration and came up with these yummy teatime (or any time, let's be honest) treats.


Got a hankering for something a little less sweet, a little bit fruity and ever so scrumptious (I've never said that word before in my life but it's fitting with the tea time scone thing, no?)?


Then, my lovely, why not try my recipe below for some

Simple Sultana, Cinnamon & Apple Scones


 





Simple Sultana, Cinnamon & Apple Scones




Ingredients


225g Self raising flour
1 tsp Baking Soda
Pinch of Salt
55g Vegan Butter
25g Caster Sugar
150ml Almond Milk (plus a little extra to glaze)
50g Sultanas
1 Apple (peeled, cored and diced)
1 - 2 tsp Cinnamon (depending on your preference)
                                                                                            




Method


 - Preheat oven to Fan 200 C / 220 C / Gas Mark 7

1. In a large bowl, mix the Salt and Baking Soda into the Flour.

2. Rub the Butter into the Flour so that the mixture looks like breadcrumbs.

3. Stir in the Caster Sugar.

4. Add the milk and combine well.

Add more Flour if the dough is too wet. You should have a slightly sticky, elasticky dough.

    5. Mix in the Sultanas, Cinnamon and chopped Apple.





 6. Either roll out and use a cookie cutter or take equal sized chunks and shape by hand.

7. Place equally spaced on a baking tray and and lightly brush the top of them with milk.

8. Bake for about 20 minutes.
