Lemon & Coconut Cupcakes


I had some leftover desiccated coconut from the ice cream I made a couple of weeks ago and whenever I think of coconut, copious tv adverts mean I automatically think of this song. So, of course, the obvious pairing for the coconut would be lime, but we didn't have any so I went for lemon instead!

Then go ahead and try my recipe below for

Lemon & Coconut Cupcakes




Ingredients


4 oz Caster Sugar
4 oz Vegan Butter
½ Banana (mashed)
1 Tbsp Flax or Chia Seeds (with 3 tbsp water)
1 tbsp Almond Milk
1 tsp Vanilla Extract
2 tsp Baking Soda
4 oz Self Raising Flour
2 oz Dessicated Coconut
Zest of 1 Lemon

Makes: 8 


Substitutions                                                                                            


Method


 - Preheat oven to Fan 175 C / 190 C / Gas Mark 5

1. Mix Butter and Sugar together.

2. Add Banana and Flax or Chia Seeds.

3. Add Milk.

4. Add Baking powder, Vanilla extract, Baking Soda and sift in the Flour.

5. Add the Coconut and Lemon zest.

6. Arrange cupcake cases in a cupcake baking tray,
(adding a little butter underneath the bottoms will prevent them moving)
And spoon about a tablespoon of the mixture into each.

7. Bake for about 20 minutes or until skewer comes out clean.
