Vegan Ice Cream Three Ways



I was looking for some sort of fruit-centered desert to have with our first BBQ of the season (eep!)
and came across this.

Easy to make and healthy?
Ding Ding Ding!

The secret? Frozen bananas!

So, here's my take on the slightly under-the-radar Banana Ice Cream...



Simple Vegan Ice Cream Three Ways




Raspberry & Coconut

Chop three bananas and take a generous handful of raspberries. Lay them on a tray and leave in the freezer until frozen through (about an hour).
Then pop them in a food processor and add 1 or 2 handfuls of unsweetened dessicated coconut. Blend until smooth. Add water if the blender is struggling.





Strawberry & Lemon

Chop three bananas and about six strawberries. Lay them on a tray and leave in the freezer until frozen through (about an hour).
Then pop them in a food processor and add the juice and zest of one quarter of a lemon. Blend until smooth. Add water if the blender is struggling.
(Optional) Roughly chop some pistachio nuts and sprinkle on top.





Blueberry & Sultana

Chop three bananas and take a generous handful of blueberries. Lay them on a tray and leave in the freezer until frozen through (about an hour).
Then pop them in a food processor and blend until smooth.
Add water if the blender is struggling.
Stir in a generous handful of sultanas.

    1. Yes! That is the best description, I should've just titled this 'Magic' haha :) I've never really tried gelato properly but if it's got pistachio in, I'm in! x
