Individual Plum Tarts

I thought I'd try something different and, as you can probably tell from now, much of my inspiration comes from just looking around the kitchen and seeing what we already have...

Today, we had plums that were starting to go a little too soft, so before they 'mushified' further, I cut them up and put them to use.

Yearning for something comforting, rich and maybe you also have some plums lying around? Because for the purpose of tempting you with this recipe, that would be really convenient...

Then let me offer my comfort in the form of my recipe below for some

Individual Plum Tarts

Individual Plum Tarts


270g Self raising flour
85g Vegan Butter
1 tsp Vanilla extract
1 tbsp Almond Milk
4 Plums (cut into quarters and thinly sliced)
2-3 tbsp Brown sugar
2 tsp Cinnamon


 - Preheat oven to Fan 180 C / 200 C / Gas Mark 6

1. In a large bowl, mix together the Flour and Butter

2. Add the vanilla extract and the milk

This should make a relatively hard/stiff but smooth dough.

3. Roll out the dough and cut out circles using a cookie cutter.

4. Carefully press the circles into a lined cupcake baking tray
(ensure that the dough stays intact to avoid leakage).

    5. Arrange the plum slices in the tart shells

(Optional: Add a dot of butter onto the plums)

 6. Mix the Brown sugar and Cinnamon together and sprinkle on top of the plums

7. Bake for 20-25 minutes.

Serving suggestion; Would be absolutely perfect served warm with a (vegan) cream of some sort, like a cashew or coconut whipped cream or vanilla custard.
