Banana Bread

A friend of mine went to Canada earlier this year and brought me back some pure Maple Syrup!
After the (many) pancakes something led me to bananas and this yumminess was born!

Feeling something a little indulgent and rich, a little sweet and nutty and little more healthy than usual?

Vegan Banana Bread
 




Vegan Banana Bread




Ingredients

3 Bananas
3 tbsp Coconut (heated) or Vegetable Oil
1 tbsp Chia seeds (mixed with 3 tbsp hot water)
1/2 tsp Vanilla Extract
2 -3 tbsp Maple Syrup (depending on sweetness of bananas)
3 tsp Baking Soda
1/2 tsp cinnamon
4 cups Self raising flour
1/2 cup Dark Muscovado Sugar
Optional: Dried fruits or nuts (with more to decorate)
                                                                  
Substitutions                      


Method

 - Preheat oven to Fan 180 C / 200 C / Gas Mark6

1. Mash the Bananas with a fork.
 
2.
Add the Oil, Chia seeds and Vanilla Extract and Maple Syrup.
 
3.
Fold in the Baking Soda, Cinnamon and Self Raising Flour.
 
4.
Mix in the Muscovado Sugar.
 
5.
Mix in your dried fruits or nuts
 
6.
Spoon mixture into a lined loaf tin.

7. Bake for about 25 minutes or until skewer comes out clean.

8. Decorate with the leftover dried fruits or nuts and drizzle of Maple Syrup.
