Naughty and Nice Energy Bites

I've been meaning to make some sort of power bar or energy bite for a while now, y'know for those times when you want a different, at-least-a-little-bit-healthy snack but you're feeling too lazy to make anything...I hope that's not just me? So I finally got around to making a little something for moments like that, skimmed some recipes, checked the cupboards et voilà!
Looks indulgent, tastes indulgent, got a little bit of naughtiness and a whole lotta niiiice.

Naughty and Nice Energy Bites

Naughty and Nice Energy Bites


50g Dried Cranberries
50g Dark Chocolate chips
20g Sunflower seeds
2 Tbsp Pomegranate seeds
1 Banana (mashed)
1 Tbsp Chia or Flax seeds (mixed with 3 tbsp hot water)
70g Cocoa powder
(Optional) 1 Tbsp Superfood powder
Desiccated Coconut



1. Place Cranberries, Chocolate chips, Sunflower seeds, Pomegranate seeds, mashed Banana and Chia (or Flax) seeds in a blender and mix.

2. Scoop out mixture into a separate bowl and fold in Cocoa powder and Superfood powder

3. Once fully incorporated, put the mixture in the fridge for 15 minutes.

4. In another bowl, pour out the Desiccated Coconut.

 5. Take out the mixture and take small chunks of it, shape and coat in the Coconut.

 6. Place the bites in an airtight container and store in the freezer.
