Pomegranate & Banana (Soy) Yogurt Donuts



  Just because you're vegan doesn't mean you can't have a naughty treat every now and then! (But I do try to make them as healthy as possible by using unrefined sugar and flour... #thuglife)

I've never really eaten donuts often but I keep seeing vegan donuts on Instagram and it's got me very tempted...

...you too? Well, then I present to you,


Pomegranate & Banana Soy Yogurt Donuts





Pomegranate & Banana Soy Yogurt Donuts




Ingredients

60g Molasses Sugar
6 Tbsp Soy Yogurt
3 Tbsp + 1 Tsp Almond Milk
1 Banana
Seeds of half a Pomegranate
125g Plain Flour
1 Tsp Baking Soda
(Optional) Pinch of Salt
(Optional) Nuts (roughly chopped, to decorate)

Method


 - Preheat oven to Fan 165 C / 180 C / Gas Mark 4

1. In a large bowl, mix together the Molasses Sugar, Soy Yogurt and Almond Milk.

2. In a separate bowl, puree together the Banana and Pomegranate seeds.
Then pass the mixture through a sieve to mix into the other ingredients.

3. Add the Flour and Baking Soda (and Salt)

4.Pour the mixture into a donut baking tray, or (like me) if you don't have one, improvise with a muffin tray then cut the holes out afterwards.




5. Bake for about 15 minutes.

6. Decorate with a simply glaze and top with nuts!
