Sweet Potato-Bean Burgers

When I first tried making bean burgers, well they weren't reeally burgers...they fell apart in the frying pan. Those 'bean pancakes' tasted good though!
 After two more tries, I decided to mash some sweet potato and add it two the mixture, et voilà!
I love how quick this recipe is, if I'm efficient, I'll have 10 burgers in no more than 20 mins!

Sweet Potato - Bean Burgers


1 Sweet Potato
1 tin Cannellini or White Kidney Beans
1/2 Cup Flour
1 Pepper
1/2 tin Sweetcorn
Mushrooms (3 or 4)
1/4 Onion
Salt, Pepper, Garlic, Chilli Powder, Basil



 1. Peel, chop and steam the Sweet Potato till soft and 'mashable'.

2. Chop the Pepper, Mushroom and Onion into small pieces and place in a frying pan over medium heat, with a little coconut oil, along with the sweetcorn and spices.
Cook till the vegetables have softened.

3. Mash the Sweet Potato and Beans together in a large bowl and mix in the Flour.

4. Mix in the other veggies.

5. Shape the burgers by hand and place in a frying pan, over medium heat,
 with a little oil.

6. Cook for 5 minutes covered, then turn the burgers over and cook for a further 5 minutes, uncovered.

7. Serve in a bun or with some sauce and salad!
