Spiced Chocolate & Apricot Cake

I'm definitely one of those people who doesn't like to start thinking of Autumn when it's still Summer, bikini vibes all the way till solstice baby!
Having said that, this cake upon reflection, is pretty Autumnal...
I don't really associate cakes with Summer, it's more smoothies and ice cream and fruit tarts, which is why I haven't baked a cake in a while, but what can I say, the stomach wants what the stomach wants! And after watching a particular baking show ;) it was only a matter of time!
This cake came out fluffy, moist (but obvs no soggy bottoms) and most certainly full of flavour - the apricot layer mid-way is delicious!

Spiced Chocolate & Apricot Cake




Ingredients

8 oz Vegan Butter
8 oz Molasses Sugar
2 Mashed Bananas
4 tsp Baking Soda
2-3 tsp Ground Ginger
2-3 tsp Cinnamon
2-3 tsp Mixed Spice
2 tsp Maple Syrup
8 oz Self Raising Flour
Apricots

Method


 - Preheat oven to Fan 175 C / 190 C / Gas Mark 5

1. In a large bowl, mix together the Molasses Sugar with the Vegan Butter.

2. Then mix in the mashed Bananas.

3. Add in the Baking Soda, Ground Ginger, Cinnamon, Mixed Spice.

4. Mix in the Maple Syrup.

5. Carefully fold in the Flour

6. Line a cake tin (if using butter instead of parchment, use it lightly), and pour in half the cake mixture.

7. Thinly slice your Apricots and place them in a layer on top of the mixture in the tin.

8. Pour the rest of the cake mixture over the apricot layer.

9. Place some more apricot slices on top then pop in the oven.
Bake for 40-45mins or until a skewer comes out clean (if doing the skewer test, check in a few places because of course the apricots inside will be wet).
