Vegan Tacos

Ahh how can you not love tacos?! Especially in the summer when you're not feeling a big, hearty dinner. They're so simple and so easy to make healthy!

This recipe barely took me twenty minutes but I managed to get eight tacos out of it.

Vegan Tacos




Ingredients

Taco Shells
Lettuce
1 Large Carrot1 Red Onion
1 Green Pepper
2 Tomatoes
1/2 tin Sweetcorn
1 tin Mixed Mexican Beans
(or a mix of Pinto, Red Kidney and Haricot Beans)

Soy Sauce
Vegetable Stock Cube
Salt, Pepper, Basil, Thyme

Method


 1. Chop the Red Onion, Green Pepper and Tomatoes into small pieces and cook them in a pan with a little oil over medium heat.
After about 5 minutes add in the Sweetcorn and Beans., followed by the Soy Sauce (to taste), Stock Cube and Spices.
Stir and cook for a further 5 minutes.
2. Roughly chop the Lettuce and grate the Carrot.

3. Heat the Taco Shells in the oven for no longer than 10 minutes at 80 C.

4. To serve, place the lettuce at the bottom of the tacos, followed by the bean mix and top with grated carrot.
