Autmnal Apple and Cinnamon Cake


Cinnamon is definitely my go-to ingredient for this time of year and mixed with apple oh! So gorgeous!

It really adds to the cosiness of this time of year, I mean, what better way to spend an autumnal evening than curled up on the sofa with a cup of tea and a slice of this,

Autumnal Apple & Cinnamon Cake




Ingredients

4 oz + 1 heaped tsp Vegan Butter
4 oz Brown Sugar
1 Mashed Banana2 tbsp Golden Syrup
4 level tsp Baking Soda

3-4 tsp Cinnamon

4 oz Self Raising Flour
1 Apple (Peeled and chopped)
1 tsp soy yoghurt

Method


 - Preheat oven to Fan 175 C / 190 C / Gas Mark 5

1. In a large bowl, mix together the Brown Sugar and Vegan Butter.

2. Then mix in the mashed Banana.

3. Add in the Golden Syrup, Baking Soda and Cinnamon.

4. Carefully fold in the Flour.

5. In a pan over medium heat, add the Vegan Butter, Soy Yoghurt and Chopped Apple.

6. Use a fork to help the Apple soften and once all the apples have softened and the mixture is of a consistency that resembles the mashed banana, take it off the heat and mix into the rest of the cake mixture.

7. Pour your mixture into a lined tin

Bake for 40mins or until a skewer comes out clean.






Serving suggestion; Add grated apple to 1 tbsp of golden syrup and spread in top of the cake. Amazing with some vanilla (n)ice cream!
