Five Alternatives to Avocado on Toast



I can no longer remember a time where my Instagram feed didn't contain photos of neatly placed or artfully mashed avocado on wholewheat toast, sprinkled with crushed black pepper.
Avo on toast is such a nutritious, filling and well, pretty snack. And it's awesome to see so many people making it a regular in their diet!
...I am not one of those people however because two years ago, after my third time trying avocado I deduced that it was in fact that that was causing me to empty the contents of my stomach after dinner. (I was living in France at the time so was also trying other foods I hadn't tried before which is why it unfortunately took three separate tries to realise...)
Up until now though, it hadn't occurred to me to create my own alternatives to this renowned snack, of which frankly, I'm jel.
These recipes are v v delicious, quick to make and can easily be stored in the fridge for you to whip out whenever hunger strikes!







Five Alternatives to Avocado on Toast





Creamy Spinach and Tofu


Ingredients

Spinach
Tofu (roughly chopped into cubes)
Soy Yoghurt
Cracked Black Pepper


Method

1. In a pan over medium heat, add the spinach and tofu with a little olive oil.
2. Once the spinach has wilted, turn off the heat and mix in 3 tbsp of soy yoghurt.

. Place the mixture on your toast and top with some cracked black pepper.







Spiced Hummus and Cherry Tomato


Ingredients

Cherry Tomatoes (sliced)
Chickpeas
Chilli flakes, Salt, Pepper, Basil
Ground Hemp Seeds

Method

1. Blend the chickpeas in a food processor, then mix in the chilli flakes, salt, pepper, and basil.
2. Spread the hummus onto your toast then place the cherry tomato slices on top and sprinkle on the ground hemp seeds.







Tomato and Walnut Salsa


Ingredients

1 Tomato
1/2 Red Onion
1 Clove Garlic
Large Handful Walnuts
Chilli powder, Oregano, Parsley
Lemon
Pomegranate Seeds

Method

1. Dice the tomato, red onion, garlic (or use a garlic press) and wanuts. Mix together.
2. Stir in chilli powder, oregano and parsley. Add a squeeze of lemon, to taste.

. Top your toast with the salsa mixture and sprinkle on the pomegranate seeds.








Garlicky Mushy Peas and Pak Choi


Ingredients

Peas
1 Pak Choi
1 Clove Garlic
Thyme, Chilli Flakes

Method

1. Blend the peas in a food processor, until desired consistency.
2. Dice or press the garlic and stir into the peas along with thyme an chilli flakes.
3. Chop the pak choi and place in a pan over medium heat with vegan butter or olive oil. Cook for 3-5minutes.
4. Spread the peas onto your toast and top with the pak choi. (Optional: sprinkle on more chilli flakes)







Mashed Cinnamon-Banana and Strawberry


Ingredients

Banana
Strawberries (sliced)
Cinnamon
Pistachio nuts (roughly chopped)

Method

1. Use a fork to mash the banana(s) until desired consistency.
2. Stir in 2-3 tsp of cinnamon.
3. Spread the mashed banana onto your toast, top with sliced strawberries and sprinkle on the pistachio.

  1. Omg these look so good, it's making me hungry lol avocsdo is one of my favourite things to have especially with some extra virgin olive oil and salt, yum. They all looking amazing, I like the look of the spinach and tofu ones.
